Kate Pauley, inspired by the southern hospitality of her Texas upbringing, founded Create Dinners in May 2016. Her aim was to host creative workshops and dinner parties throughout New York City, fostering community by bringing together friends and strangers for meaningful connections.

Pauley’s latest event took place in a former factory building in Brooklyn, booked through Peerspace. “I personally love hosting in a new space. Most Create Dinners events are in new spaces – Peerspace is a great resource for finding one. For us, they’re like blank canvases,” she stated. “Event spaces allow us to curate a feeling and design a specific experience for those in the room.”

The event, named Sourdough, featured a multi-course dining experience with chefs Abigail Kirn and Carlos De La Concha, both formerly of The French Laundry and Eleven Madison Park. It required specific features such as multiple gathering areas and a fully equipped kitchen.

Peerspace provided an ideal venue with high ceilings and modern amenities like a shaker kitchen, tables, and chairs included with the venue. Chelsea’s Williamsburg space served as the backdrop for an evening focused on food and conversation. Guests received questions and prompts with each course to encourage interaction.
